Banana Bread
Easy recipe that your whole family can enjoy!



Banana Bread



Ingredients;

4oz / 100g sultanas

6oz. / 175 g plain flour

2 teaspoons baking powder

1/2 teaspoon each of bicarbonate of soda and salt

5oz. / 125 g. butter

6oz. / 150 g. granulated sugar

2 eggs

3 large really riipe (almost black) bananas

2 oz / 50g chopped walnuts (optional)

Loaf tin to cook the banana bread in.




Method;

1. You'll need an adult to help with this first bit! Place the sultanas in a bowl and immerse completely with boiling water from a kettle. Leave to stand for about 30 minutes until the sultanas are nice and plump, then drain the water off them and set them aside.

2. Heat your oven up to 170C / 350F.

3. Melt the butter in the microwave or in a small pan over a gentle heat.

4. Place all the dry ingredients, except the sugar and walnuts, into a large mixing bowl, and mix well together.

5. In a separate bowl, mix the melted butter with the sugar until well blended. Add the eggs to this mix and keep stirring well.

6. Mash up the bananas and add them to the egg mixture, along with the sultanas and the walnuts.

7. Add all the remaining dry ingredients and continue to mix until everything is combined.

8. Line the loaf tin with parchment paper so that the mix won't stick to the sides and bottom.

9. Pour the batter into the loaf tin and place in the oven.

10. Bake for approx 1 1/2 to 2 hours until cooked through. Use a skewer to test if it is completely cooked in the middle before taking it out of the oven. If necessary, cook for a further 20 - 30 minutes with the oven temperature reduced a little.

Chocolate Self Saucing Pudding



Ingredients

* 100gm Butter
* 1C Sugar
* 2Tbs Coco powder
* 1 1/3C Flour
* 4tsp Baking powder
* 1/4 tsp Salt
* 2/3 C Milk
* ½ tsp vanilla essence

* 1 C Brown sugar
* ½ C white sugar
* 4 Tbs Coco Powder
* 2 C Boiling water

Directions

1. Turn oven on to 180C Bake.
2. Melt the butter and mix in the sugar and coco powder.
3. Add flour, baking powder and salt and mix until just combined.
4. Mix in milk and vanilla.
5. Put into a dish so it comes no more than 1/3 up the side (cos it boils, and will mess up your oven) 20x25cm is good.
6. Put brown and white sugar, and coco powder on top.
7. Just before it goes into the oven carefully pour the boiling water over a spoon onto the mixture.
8. Bake for 40 minutes at 180C.
9. Serve immediately with whipped cream.

Triple Chocolate Oreo Chunk Cookies

Yield: 3 1/2 dozen cookies

Cook Time: 8-10 minutes
Ingredients:

2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup dutch processed cocoa
1 cup unsalted butter, at room temperature
1 cup granulated sugar
1 cup light brown sugar
2 large eggs
2 teaspoons vanilla extract
1 cup chopped white chocolate
1 cup chopped semi-sweet chocolate
1 cup chopped Oreo cookies
Directions:

1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper or silicone mat. Set aside.

2. In a medium bowl, sift flour, baking soda, salt, and cocoa. Set aside.

3. With a mixer, cream butter and sugars together until smooth. Add in eggs, one at a time. Next, add in vanilla extract. Mix until blended.

4. Slowly add flour mixture to sugar mixture and mix until flour disappears. Stir in chocolate chunks and Oreos. Drop cookie dough by rounded tablespoons onto prepared baking sheet, about 2 inches apart.

5. Bake cookies for 8-10 minutes. Don't over bake. Remove from oven and let sit on baking sheet for 3-5 minutes. Move to a cooling rack and cool completely.

Caramel Choc Pecan

This Caramel Choc Pecan Slice will be loved by everyone and you'll find most of the ingredients already in your pantry.

Ingredients

* 225g butter
* 1¹&#8260;³ cup self-raising flour
* 2 tablespoons cocoa
* ¹&#8260;³ cup caster sugar
* ½ cup brown sugar
* 2 x 395g cans sweetened condensed milk
* ¾ cup chopped pecans
* ¾ cup chopped dark chocolate

Method


1. Preheat the oven to 180ºC (160ºC fan forced). Grease the base and sides of a 20 x 30cm brownie pan and line with baking paper. Melt 125g butter. Add flour, cocoa and caster sugar and mix well. Press into pan and bake for 15 min.
2. Meanwhile, combine brown sugar, sweetened condensed milk and remaining butter in a large non-stick pan, a wok
is ideal. Stir over low heat until combined. Increase the heat to medium and stir continuously until mixture thickens (about 15 min).
3. Pour over base, top with the pecans and chocolate. Bake for 10 min. Allow to cool completely then cut into
small squares to serve.

Made this was sooo good

Mmm thanks ladies, I just made the banana cake (no egg) recipe off here and the chocolate icing that you melt ingredients for....

How do you make a nice gravy to go with sausages without having the roastings to use. I normally use Jamies Olivers vege gravy but I want somthing to go with sausages that is not out of a packet.

I could use a good liquid beef stock thickened and with herbs added?

What do you do?

I have also added nuts to it or sprinkled the top with sliced almonds.

Use whatever dried fruits you like: raisins, apricots and cranberries are good laugh

I made this today and was pleasantly surprised at how easy and how yummy it is yes!!!!
