I came across a recipe I had scribbled down off the telly some time ago, can't remember who was cooking....

Caramalised (red)onion and feta in a homemade flaky puff pastry.

Have made it twice. Goats feta works better than cows (naturally, as has more "punch") Have added thyme to the mix, but it is still lacking.

The sweetness of the onions is nicely balanced by the goats feta, but it still needs a little something, something.....

Suggestions ???????

It's an Annabel Langbein recipe from the Free Range Cookbook/Tv Series, I just checked my book for you to see what else she nay suggest for that recipe but she didnt have any other suggestions. Am still thinking what else you could add to jazz it up. I havent got round to making that yet. I have made the caramelised onions tho and yum!!!!

i've made it as well, but yeah, i thought the same thing. nice but not WOW, i'd make the onions again, but i'm not sure i'd do the whole tart thing.

My friend made a caramelised onion and blue cheese tart in the weekend, that was amazing! Gorgeous.

Yep, that would work.

I made it AGAIN - I don't give up easily. Sprinkled more feta over the top as well as what I used when I baked it. DELICIOUS. Second time round scrounged some fresh thyme from a friends garden (ours is pathetic right now) and this helped over my last version with dried thyme.

And, BTW, I think the trick is eating it cold the following day. It doesn't seem to work as well when it is warm.

Love everyone elses suggestions - the only other things I can suggest is:

Balsamic vinager & brown sugar if the onions arent' already caramalised with it.

If she does use those to caramalise the onions and it's still not sweet enough to match the feta, add semi dried tomatoes or beetroot.

If it's the mouth feel try adding just a little bit of beaten egg and cream, or grate a little softer style pecorino cheese on the top.

If you can find Lauraine Jacobs blog, she has some amazing recipes on there.
