Hiya,

I want to make GF biscuits to make wee cupcake cookies for DD's birthday party this weekend...

Does anyone have a recipe they would recommend? Or should I just experiment with a regular biscuit recipe, but sub with GF flour??

What are cupcake cookies. I have a couple of recipes which are working well for me atm.

Right oh, googled and found this recipe which is pretty much my standard biscuit recipe:

BROWN SUGAR CUPCAKE COOKIES
1/2 c. soft butter
6 tbsp. white sugar
6 tbsp. brown sugar
1/2 tsp. vanilla
1 egg
1 c. plus 2 tbsp. flour
1/2 tsp. soda
1/2 tsp. salt

I use my own flour mix which is 4 cups of brown rice flour, 1 and 1/3 cup potato starch and 2/3 cup tapioca flour. I'd do a straight sub in the above recipe and add 1/2tsp of xanthan/guar gum as well.

M&M COOKIES

3/4c white sugar
3/4c brown sugar
250gm butter
2 eggs
2 tsp canilla
2 and 1/4 c flour
2 tsp of xanthan gum
1 stp baking soda
1 tsp salt
1 packet m&M (I use choc chips and sunflower seeds)

This is my dough recipe which once chilled can be used as a biscuit cut out dough - it's quite sweet though as it's designed to be pastry for mince pies (which are divine btw)

MINCE PIE PASTRY
12oz GF flour
2 tsp xanthan gum
8oz butter
8oz brown sugar
1 tsp cinamon
1 small egg yoke
2 tsp baking powder
Cream butter and sugar, add egg and presifted dry ingredients. Chill for an hour or two before cutting - chill and roll as necessary as it can be quite soft to work with.

I tried a really nice shortbread recipe I've used in the past with regular flour it was SOOO nice, but it wasnt able to be cut with a cookie cutter sadly...

hehe yea, they are just regular cookies, but cut with a cupcake cutter....going to ice with marshmallow fondant I'm making...it's super easy to make and I'll just buy GF marshmallows and icing sugar smile

Oh you have yummy plans!!!!

Well I'm not sure the first two recipes will be right for what you want - recipe for the first one suggests baking them in cupcakes papers unsure The second recipe is what I chuck anything and everything into - quinoa flakes, puffed amaranth, choc chips, sunflower seeds, cranberries etc - yummy biscuit but more like a cookie.

But the mince pie pastry will work - it might seem too soft when you first pull it together but once it's rested in the fridge and you've added plenty of flour to your surface it tends to firm up a bit. I found rolling it between two sheets of baking paper easiest then I cut them, rechilled them and then removed the excess dough and baked at 170. So tricky and involved but it works. It's very sweet though - you may want to reduce the sugar but I'm not sure if that will affect the final outcome. I recommend a trial run before the party (you could make the pastry (it's a big batch), make one test batch and freeze the rest of the pastry if it's a goer). The sweetness offsets the xmas mince meat very nicely :yumyum:

Otherwise there is a ginger bread man recipe knocking around here - you might be able to find it through the search function... unsure Or just google sugar biscuit/cookie and lots of gluten recipes will come up then sub with GF and xanthan gum - the egg is the trick to bind it all together I reckon!
