mmm those oaty pancakes someone posted in OT ages ago, those with blueberries are SOOOOOO good! :drooling: Sorry dont know if I have it saved...I'll go and have a wee look...

I make these all the time, with just raspberries. You could use just blueberries wink They freeze really well too.

This is a recipe someone shared from here and it is DELISH!!!!

Lemon and Blueberry slice

BASE

225g Plain flour
100g caster sugar
175g cold butter, cut into cubes
(I also add lemon zest)

Preheat oven to 180. Place all ingredients in a food processor and whizz to resemble fine sand (it didnt look like it would hold together but does).
Press crumbs into LINED 18cm x 27cm tin and cook for about 20mins till golden.

TOPPING

3 eggs
225g caster sugar
Juice and rind of 3 lemons
40g flour
75g blueberries (can use frozen)

While base is cooking place eggs and sugar in a mixing bowl and mix until very thick and pale - about 8-10 mins. Stir in juice and rind and fold in flour. Sprinkle blueberries evenly over base and pour over topping. Bake for 35-40 mins or till set. Leave to cool in tin before cutting into bars.

This is yummy too, Its from the NZ womens weekly, I have made it a few times,

Blueberry cheesecake slice

240g packet chocolate chip biscuits, crushed
65g butter, melted
500g cream cheese, at room temperature
¾ cup caster sugar
1 tsp vanilla essence
¾ cup cream
2 eggs
2 cups blueberries (fresh or frozen)

1. Heat oven to 160°C (140°C fan bake). Line a 20cm square cake tin with baking paper with an overhang on all sides.

2. Mix crushed biscuits with butter and press into the base of the tin. Chill while preparing the filling.

3. Place the cream cheese, sugar and vanilla in a bowl and beat until smooth and creamy, then beat in cream and eggs to combine. Pour mixture over crumb base, then scatter surface with blueberries.

4. Bake slice for 45 minutes or until just set in the middle. Cool, then remove from the tin and cut into squares.

Our quick pudding is:

Line a dish with a sheet of readymade pastry, flakey or sweet whichever you prefer.
seasonal fruit on top

This is enuf for our family of 5, i doule the franjipane if its for visitors as well.

We also like a greased dish, seasonal fruit on the bottom and top with Donna Hays simple Lemon pudding recipe - i'll see if i can find it on line.

On a hot muggy day I loooove a blueberry smoothie!
I usually add a dollop of honey to sweeten it or if I'm naughty I add some icecream instead!
