Hiya.

I know this has prob been asked heaps of times before but I need a really good icing recipe.

DS birthday is in 2 weeks and I have to work full time that day and so does DH. I can make a cake the night before and happy to do that, but ...... all the icing recipes I use tend to seperate after a while. im afraid that if I make and ice a cake on the thurs night that it will be crap by fri night. I just dont want the poor wee mite to miss out on cake just because I have to work. Cant transfer the birthday to sat as Dh is out of town.

Have looked in allergy cookbook and there is a recipe for a marshmallow frosting - has any one used this and does it keep nicely for 24 hours?

Or does anyone else have a really good icing recipe that will last the distance.

Can you not ice the cake when you get home - would only take ten mins? make the cake the night before though. I just use a non dairy spread and make a butter cream style icing and it's absolutely fine as long as its done on the day of serving smile

Same as peony said I use olivani boiled water and icing sugar / another option is fondant which u could do well in advance, put jam under it instead of egg or butter smile

Thanks peony, but we are going straight from work to mcdonalds for tea and wanted to give hime the cake there.
might just have to try the fondant thing and see how I get on.

If you want to do fondant icing, the Pettinice fondant you can get from the supermarket is DF, EF and NF. It's basically just sugar giggle

You can make a buttercream with olivani instead of butter, or with kremelta, which actually works quite well in the summer because it won't melt in the heat like buttercream can. I really like the wilton buttercream recipe which is half butter (but I use olivani) and half kremelta, and then sub rice milk for the milk. Its yum and lasts well in the heat.
