Hi, I've been looking after an elderly T1 man and he loves his desserts, he has been T1 since his 20's and is in his 80's now.
He has been widowed and isn't coping with cooking on his own. His blood sugars have been really high, they came down for a week or two when i first tweaked his diet but then shot to to late teens early 20's over the last week.

I went through his cupboards as he said nothing had changed and in some ways it hadn't but he had bought a schweppes cordial instead of Thriftee and had fruit in juice and syrup for his fruit and regular jelly not weight watchers. sigh I'm guessing those changes would have been enough.

But he loves his puddings and has always had them after midday and evening meals. Used to work as a farmer so needed the energy in his day.

So I'm wanting ideas of what to make for his dessert.
So far its been Sago and Tapioca puddings made with sucral not sugar and WW jelly and fruit.

I have the difficulty that he only has a coal range and no microwave or oven so I have been cooking a lot from home.

But some ideas would be good.

Pudding at midday AND dinner !?!

In our house we try and stick with a small choc freddo frog or ice cream for dessert as they don't seem to spike too much.
For cakes I use icing made from chocolate mixed with cream cheese which also doesn't cause high bg's.

Custard or semolina made with sucryl?

Whats desert?

Of course i am being silly, but regular desert IMO is tantamount to suicide.

Having ones midday meal at lunch time does help a lot of people with their control as it gives one 5-6 hours of more active period to use up the energy, rather than let it tie in one gut while they sleep or try to.

The rare times we eat pizza is at lunch to do so at dinner does us no good at all.

Yep two desserts. As he has been T1 for such a long time I guess its worked for him and it feels cruel to try and change him now.
To make it to his age and only now be having problems is pretty spectacular I think. (Since his DW died he has had problems as she used to do all the cooking & meal planning)

Yea, this guy is type one, yes? So im guessing he's on insulin, yes?
As for his control, he needs to switch back to sugar free everything! You can get sugar free chocolate, thriftee is MUCH better and he needs to stop drinking regular cordial..
Fruti salad either fresh or canned (in light juice), custard made with sweetener, sugar free icecream.. There are options, but first make the switch back to sugar free! He has done well, your right yes But to keep doing well he needs to switch!

I am inclined to agree with you on your viewpoint, his system has worked to get him to where he is although the Medical Profession would probably disagree.

Any blood sugar reading over 10 is doing harm to nerve endings etc, but if i get to the age of 80 , i will consider i have had quantity of life over quality amd probably do the same.

Cordial is pretty much a no go, but if he is used to dessert I don't see too much harm in having desserts with sugar.
I guess he could carb count & adjust his insulin? Things like custard can be made with half the receipe amount of sugar & they taste fine & will only add a small amount of carb to the total.
What sort of desserst did he eat before?
