isn't it apple season? apples have been a dollar a kilo here for the last three or four weeks.

i stew and freeze, then pull out as needed. remember that when i was a kid my gramma would preserve and i'd have them hot on my breakfast.... nom nom nom!

Doesn't mean that apples are super cheap everywhere no For me to get super cheap apples, I would have to go to Greytown but then the use of mine and DH time and fuel would defeat the purpose of getting cheap apples. Apples here are still around $2.50/kg in the supermarket smile

Choice of words not quite so succinct hat I interfere with things. I never seem to make the same recipe twice. Tonight I'm going to make the Apple cake i turned into a pear cake and add glace ginger to it and make it a pudding with butterscotch sauce...

But then I wonder if I should as I will go all anothersnort and I have a man friend coming over for dinner... not a good look right?

My Flatmate makes a fanatstic Apple muffin (actually blueberry muffin recipe) But she GRATES the apple, so you get the yummy apple but not the icky texture you usually get... it is damn good.
She also puts cinnamon and sugar on top laugh

Would you mind posting the recipe for those muffins Katerin if you have it please, they sound yum!! Havent found a decent apple muffin recipe I really like yet.

Have some apples I need to use up.

The trick is the Grate the Apple Apparently smile

Blueberry Muffins

2 cups flour
¾ cup plus 1 tsp sugar
2 ½ tsp baking powder
1 tsp fresh nutmeg
1 tsp baking soda
½ tsp salt
¼ tsp cinnamon
1 cup buttermilk at room temperature
8 Tbsp (113gm) butter
2 Eggs
½ tsp vanilla extract
1 cup fresh or unthawed frozen berries or grated apple or pear.

Position a rack in the centre of the oven and preheat to 205oC.
Sift Flour, ¾ cup sugar, baking powder, nutmeg. Baking soda, and salt
Combine the remaining 1 tsp sugar and the cinnamon and set aside for the topping.
In a medium bowl, whisk the buttermilk, melted butter, eggs and vanilla until you don’t see the blended egg. Add all the flour mixture and stir until just combined. Scrape bowl with rubber spatula and stir a couple more time, don’t over mix. Gently fold in the fruit.
Divide batter in to the cups and sprinkle with cinnamon sugar
Bake 12-120 minutes or until toothpick comes out clean, or they spring back when lightly touched

I do an apple and banana muffin which is very nice. You grate the apple in that too. Its just like a banana muffin with apple added and its yummy.

One recipe I made was an Apple Galette - its like an open apple pie. You roll out pastry, put slices of apple down, dot with fruit mince (or you could leave that out but its a good way of using it up if you have leftovers after Christmas) leaving a few cms around the edge, sprinkle with sugar and dot with some butter and bake. Its yummy.

At least that's what I remember, it was from a Destitute Gourmet book.

Those muffins sounds nice kiwimum, do you just make banana muffins out of banana cake recipe and grate apple in?
