Anyone have a good one to share that freezes well for school/work lunches? Have some left-over bacon I want to use.

Oh and do you ever freeze muffins in paper muffin cases? Do they go soggy at all?

Cant help with freezing...

but my recipe that I use goes like this
1 cup grated cheese
2 cup flour
1 cup milk
1 T baking powder
salt

to this I often add chopped up red onion, pumpkin and courgette...great way to get veges into the kids smile

bake at 180 until golden. I usually do mine in silicone mini muffin trays, so not too sure about freezing in those paper cases.

Enjoy, they sure are yummmmmmy

Make this really easy scone recipe - you could cook as muffins as well I am sure.

2 c flour
2 tsp BP
2 cup grated cheese
1 1/4 c milk

Mix dry ingredients and add in any extras (bacon, herbs, spices etc). Add milk. Dollop onto lined tray or shape into loaves. Sprinkle with more cheese if desired. Cook @ 200oC for 10 minutes. Enjoy!

I really don't like savoury muffins, but this recipie from Allison Goftons muffin book is amazing! I always freeze muffins & cupcakes for DS cause he needs different ones that are dairy free & I never have any problem with them going soggy when defrosting even if they are in the paper cases smile

2 Cups flour
4tsp baking powder
1/2 tsp salt
1/2 tsp black pepper
1 tsp paprika
50gms butter
1 cup Tasty Cheese
2 Tblspn each of chopped fresh tymy & oregano
(or 1tsp each dried)
1 egg
1 1/2 cups milk
250gms Camembert cheese (this is only for serving, so i quite often leave it off if I don't have any)

1. Sift flour, baking powder, salt, pepper & paprika into a bowl. Rub in the butter until it resembles crumbs. Stir in grated cheese & herbs & make a well.

2. Beat the egg & milk together & stir into the dry ingredients

3. Divid mixture into 30 well-greased mini muffin tins (or just normal size ones are fine too!)

4. Bake at 200 for 10-12mins until golden brown (longer if they are normal size muffins)

5. Just before servin, cut the camembert into thin slices. Make a vertical cut in each muffin & fill with a slice of camembert. Bake at the top of an oven heated to 200 for 5mins until cheese has melted & serve warm (I do this for special occasions, its sooooo yummy!)


I suppose you could add your bacon into them as well, Yummmmm! Ok i'm going to make some now for my morning tea i think giggle You got me all hungry
