OK - I'm going to a pot luck dinner tomorrow night and just found out tonight that I have to take a meat dish....
Usually I would just chuck together a lasange or something, but have been told that the other lady also on meat, is doing a mince dish already.
Does anyone have any suggestions for a dish that I could take that doesn't take much effort and doesn't involve mince??
I have to work tomorrow, get home at 5pm, and have to be out the door again by 6.30pm.
I'm having a complete blank!!!
Any ideas will be greatly appreciated \:\)

Bah, piot luck means taht - if you end up with 2 mince dishes, so be it!

unless you went lamb mince and did a moussaka?

i do like the chicken idea though ;\)

Or a pasta with a simple sauce and chicken.

What about a meatloaf???

I was trying to find the easy recipe thread the othe day, but can't, but Viv's Meatloaf is good, ive taken that to a pot luck before!

I think if you go to page 10 or 11 in the tread it will tell you what number the meatloaf is on!

what goes down a treat is meat balls with a sweet chilli sauce to dip it in. People will love them and its easy to make

pork/chicken stir fry rice

cook rice tonight and keep in fridge,
tomorrow stir fry strips of porks chnitzel/chicken breast along with any veges you want (or a pkt of frozen stir fry veges) add in soy sauce and sweet thai chilli sauce aliong with a shake of garlic salt, then stir thru cold rice, heat until piping hot. Takes about 10mins all together \:\)

I like the idea of something in the crockpot too, then its ready to go when you get home from work,

sausage casserole
lamb stew
chicken curry

I also like tbe cooked chick idea!

Last time we went to a Pot Luck Dinner, I took home made pizzas - smoked chicken, cranberry sauce, brie & pinenuts. They went down a treat and were served as a wee entree before the main meal.

I went to a pot luck dinner couple of weeks ago and I took the EBB meatloaf and man did that dish disappear super fast...

Next dinner I have to go to in a couple of weeks time I am taking a rolled chicken roast...

I know!!! and I have been asked for the recipe as well but told them "sorry its a secret passed down from generations recipe that I can't possibly share with you"

The last potluck dinner we went to, one of the ladies did corned beef in the crockpot. And she made a parsley sauce for it, which was lovely. It all disappeared really fast.

I'd never had it at a potluck dinner before, and for some strange reason never considered taking it, either. But from this experience, will keep it in mind for future pot lucks.

Meat balls are usally great too, and can be either part of the main, or used as nibbles.

How about my "cheat's dinner"? Buy a cooked chicken, and two tins of Watties Just Add Sweet Apricot Chicken. Shred chicken into frying pan, tip over the two cans of Sweet Apricot Chicken and simmer for 20 minutes. Presto ... yummy Apricot Chicken. If you want to go the extra mile - throw a few bags of Uncle Ben's boil in the bag rice in some boiling water, and serve with the chicken. Yummy! I get so many compliments on this dish - just make sure you hide the cans!!

I have a friend who made filo pastry parcels for meat mains, its a great idea if you know how many people are attending as you can make sure there is at least one portion each.

They were delicious with chicken, cheese and apricot inside. Probably a bit fiddly in the time you have, but perhaps you could make them with precooked chicken and bake when you get there?

I love tryin new foods at pot luck dinners!

THANK YOU SO MUCH!! \:\) \:\)

Tonight I am tossing up between Felicis idea of pasta with chicken and a simple sauce ..... or ..... Fourplus idea of chicken nibbles with Honey Soy coating. I'll see if chicken nibbles are on special, and if not, it'll be the pasta... YUM!!!

But rest assured that I will DEFINATELY be copying all the suggestions and keeping them in a safe place for the next time I have a mental block / brain fade... probably tomorrow!
